Mini Solar Cooker Test 1






We haven't had much luck with the weather lately--not enough steady sunlight.
If it's not raining, it's too cold and cloudy. Today we had some sun, but it was just too short-lived. It's only been hot enough to keep the egg warm. We'll keep trying to catch that sunshine. ;o)

Solar Cooked Chocolate Mug Cake



We were inspired by the microwavable chocolate mug cake that we've modified the recipe and adapted it to solar cooking. We really like the idea of using a mug to mix the ingredients in and then baking right in it. It definitely won't be a 2 to 5 minute mug cake, but the texture & flavor is worth the wait.

Solar Cooked Chocolate Mug Cake
2 T. cake flour
3 T. sugar
2 T. unsweetened cocoa powder (the brand that rhymes with jersey)
1/8 cup of whisked egg (we saved the remaining whisked egg and made scrambled eggs later.)
2 T. evaporated milk
2 T. vegetable oil
2 T. chocolate chips
4 drops of vanilla extract
1/8 t. baking powder
a pinch of Kosher salt


Combine all ingredients in a black, stoneware/ceramic mug and solar cook for 2-3 hours or until toothpick test comes out clean.
