This month marks the one year that we have been solar cooking and we're still amazed at being able to cook in this method. So to celebrate the occasion, we solar cooked three dishes this weekend. We made a solar cooked version of Cowboy Coffee, white rice (which we later turned into Swedish Rice Pudding) and Steak and Onions--we will post the video for this one soon.

It is still every bit of fun as it was when we first began in May 2009. We'd like to thank all our subscribers and viewers on YouTube. We hope that you have enjoyed and will continue to enjoy our solar cooking videos.

This is the 2nd solar cooked dish we prepared on Earth Day. We used Emeril's Kicked Up Tuna Melt recipe

"L" couldn't believe that it actually cooked :->.

The edges of the bread were toasted, however the center on the bottom side of the bread was soft. The recipe was delicious though and it's definitely a keeper!

"L" suggested that perhaps buttering the bread next time might help toast them more evenly. Pre-(solar)toasting the buttered bread slices lightly before adding the toppings might also do the trick.

We haven't had much luck with the weather lately--not enough steady sunlight.
If it's not raining, it's too cold and cloudy. Today we had some sun, but it was just too short-lived. It's only been hot enough to keep the egg warm. We'll keep trying to catch that sunshine. ;o)

Solar Cooked Chocolate Mug Cake

We were inspired by the microwavable chocolate mug cake that we've modified the recipe and adapted it to solar cooking. We really like the idea of using a mug to mix the ingredients in and then baking right in it. It definitely won't be a 2 to 5 minute mug cake, but the texture & flavor is worth the wait.

Solar Cooked Chocolate Mug Cake
2 T. cake flour
3 T. sugar
2 T. unsweetened cocoa powder (the brand that rhymes with jersey)
1/8 cup of whisked egg (we saved the remaining whisked egg and made scrambled eggs later.)
2 T. evaporated milk
2 T. vegetable oil
2 T. chocolate chips
4 drops of vanilla extract
1/8 t. baking powder
a pinch of Kosher salt

Combine all ingredients in a black, stoneware/ceramic mug and solar cook for 2-3 hours or until toothpick test comes out clean.

9.5" Glass Plates

We found the 9.5" glass plates that we've been looking for at a thrift shop. They were 3 for less than $4.00. We painted one of them black on the back and baked it in the conventional oven for about half an hour @ about 250 F to cure the paint. We will use it for solar cooking bacon.

The glass plate fits perfectly inside our glass bowl.

We will use the other 2 clear glass plates as lids.

To the right you can see one of the 8 nesting black bowls inside the trifle bowl covered with one of the clear glass plates.

While browsing through the clearance shelf of a local store one day, we spotted a box of Gibson 8-piece set of black bowls. http://www.gibsonusa.com/

They’re made from stoneware and are actually safe for the oven, dishwasher, and microwave. We, of course, didn't pass up the chance to buy them. We did a little research online when we got home and found out that the set is actually called a nesting bowl because they nest neatly inside one another.

We were disappointed to find out though that they have been discontinued. That's too bad because they’re just perfect for solar cooking. The smallest bowl was just right for our mini solar oven. Here are pictures of an egg we've successfully solar cooked in it. It was mostly sunny & 86 °F. The egg was completely cooked in 1 hour & 15 minutes.

Here are pictures that show how hot the 8 1/4 " bowl got. It reached 300°F after 2 hours. The test was done after 12 p.m., 83°F, with continuous sunshine.

After making some improvements on our solar box cooker, we tested it again to see if they made a difference.

It was partly cloudy, 88 F. Our goal was to reach 220 F.

We were surprised to see it reach 225 F! Not bad for recycled packaging.

We have finally completed our solar box cooker project that's inspired by the simple and Kyoto solar box cookers. We used the actual box that our HotPot solar cooker was shipped in. We thought that it made the perfect solar box cooker because it was already a box within a box, which was exactly what we needed to construct one. It took us about 45 minutes to complete the whole project.

Sunshine Cooked Cajun Spiced Pulled Pork & Solar Po' Boy Style Sandwich

We were actually going to solar cook a rice dish, but we were missing an essential ingredient to complete the recipe. So we decided on using up the remaining pork shoulder (butt) that we didn't cook when we solar cooked the Hawaiian Kalua pig. This was the second time we cooked a large cut of meat and this time we made sure that we checked the internal temperature of the meat, as suggested by a YouTuber. The outside temperature was 89 F. We had 5 hours of continuous sunshine and finished it just in time before the rain.

After the cooked bacon slices were removed from the dark round cake pan, we washed and scrubbed it with soap and water to remove the bacon residue that was stuck to it. Maybe we should have soaked it first because we noticed that a little bit of the teflon coating started to peel off. We had to throw the pan into the trash. We will not use a dark round cake pan to cook bacon next time. We'll find a glass pie pan that we can spray black on the outside or a black plate to cook the bacon on. It will be easier to clean too.

Solar Cooked Thai Tofu Red Curry with Vegetables

On the day that we started cooking this dish, it was predicted to be very cloudy and to rain all day. Suprisingly, the sun actually came out for a few hours. We didn't want all that sunshine to go to waste, so we put together a quick & easy dish. Unfortunately, we didn't get continuous sunshine. As a result, the dish cooked very slowly. We managed to cook it about 3/4ths of the way before the clouds moved in. We packed up our solar cooker, refrigerated the dish, and finished solar cooking it the next day. It only needed just 1 hour of continuous sunshine to completely cook.
